
I originally got this recipe from Plain Chicken.
Confession: I get A LOT of recipes from there, and then make them "skinny".
Here's how I made this recipe Skinny:
INGREDIENTS
1 can reduced fat crescent rolls
1/2 lb. extra lean ground beef (I use 97% lean)
1 can Original Rotel, drained
1 package Taco Seasoning
1 6 oz. container Fage 0% plain greek yogurt
1 cup reduced fat shredded cheddar cheese
1/2 bag Baked Doritos Nacho Cheese chips, crushed
DIRECTIONS
Preheat oven to 350.
In a large skillet, brown ground beef and drain off fat.
Add in taco seasoning and Rotel. Simmer for 5 minutes.
Press crescent rolls in the bottom of a 9x13 greased pan.
Press seams to seal. Top crescent rolls with meat mixture, then spread greek yogurt over meat. Top with shredded cheese and crushed Doritos.
Bake for 30 minutes.
320 Calories per 1/8 of the recipe!

Love, love, love your blog! You are GORGEOUS! Question - I don't like greek yogurt. I've tried several brands and the toothpaste-like consistency makes me dry heave. But I know it rocks a lot of protein. Can you taste the greek yogurt in this or will it be semi-hidden to my weird taste buds?
Just checking - when you say a half a bag of Doritos - do you mean the big family size bag, or the snack size? Because otherwise - NOM! :)

How do you figure out the calorie content when you make a recipe from scratch? I don't count my calories because I don't know how to do this but would like to start. Any advice? Or a website I could go to to learn how? Thanks!
I have been substituting sour cream with yogurt for years. Here is the trick - you strain the water out of the yogurt and it tastes just like REAL sour cream.
Take one large plain low fat yogurt and place it in a strainer lined with paper towels. Place the strainer in a large bowl (to catch the water) and put in the refrigerator over night. The yogurt will become thick and have the consistency of sour cream. I promise you won't be able to tell the different between the two!

This sounds delightful! Question do you ever use ground turkey? I just wonder what the calorie dif would be. I might just have to do some ciphering. I just love reading this. Cracks me up and makes me get off my arse and do something! Thanks for being an inspiration!
Making this tomorrow night. Is there any other suggestions you use for 'skinny-ing' down receipes? I like the yogurt for sour cream. Any more suggestions?

I made this tonight for my family. It was a little too spicy for my toddler as well as for myself who is breast feeding. But I did have a taste of it and it was YUMMY! My husband also gobbled it all up though. I think next time (Yes I will make this again) I will use less taco seasoning and a less spicy rotel.

To count your calories on a recipe from scratch use myfitnesspal.com. You enter all the ingredients separately and it will help you calculate calories per serving. It's also a great site to help you track everything you eat. Without it I would not have been able to lose 50 lbs.
This was so delish! I ran out of taco mix and had to improvise with spices, I ended up making it a bit too spicy for my taste. My boyfriend LOVED it though, and went back for seconds, then thirds, had some before work today and brought some with him to work!
This dish is one of our new favs! I think I've made it 4 times since I first read the post....tonight I am trying chicken instead of beef! Yum yum yum!!

Hi Erin! I made this a month or so ago. I'm actually making a few of them this weekend. It's a total hit! I could taste the greek yogurt, but it tasted like sour cream. The consistency is completely different than eating it from the container. Hope that helps!! :)
