Pinspiration Wednesday: Skinny Enchilada Lasagna

I decided to take a recipe I found on Pinterest and skinny it up for this week's

I obviously substituted ingredients and played around with it a little, but the result was AMAZING! And all for under 300 calories! You're welcome!



INGREDIENTS: 
-3 boneless, skinless chicken breasts, baked and chopped or shredded
-4 cups reduced fat shredded cheese
-1 can 98% fat free cream of chicken soup
-2 cups fat free greek yogurt
-1 can Original Rotel, drained
-8 small corn tortillas
-salt & pepper to taste to chicken

DIRECTIONS: 
While chicken bakes, in a separate bowl combine cream of chicken, greek yogurt and drained Rotel.
Layer the bottom of 8x11 pan with 1/3 of the cream mixture. Get corn tortillas and submerge in a bowl of water one by one and then layer on top of cream mixture. I used 4 tortillas per layer. Two whole tortillas and 2 that I tore up.
On top of the corn tortillas, layer more cream mixture, 1/2 of cooked chicken, and 1 cup of shredded cheese. On top of cheese add the remaining 4 corn tortillas (make sure you dip them in water first), the rest of the cream mixture, rest of the chicken and rest of the cheese.
It should look like this:

Bake at 425 for 20 minutes. Then, to get the cheese nice and brown, I put it under the broiler on High for about 3-5 minutes (make sure to keep an eye on it or it will burn!)
YUMMMM!!!!
I served it with corn. You can even see Big T in the back (my almost 3 year old) chowing down! It was THAT good! It's sure to become a family favorite!

CALORIES: for 1/8 of the recipe it is 294 calories!

Ok, I've got a silly question for you...
I'm looking at getting a stove like you have - with the controls in the front, and no back. I can be a bit of a messy cook, and I'm worried about splashing/food etc, going down the back.
Do you have this problem at all???

You can also dip your tortillas in the water you cooked your chicken to give them a bit more flavor...

General question, not being critical, just curious - why always paper plates? Do you not have a dishwasher? Or not have actual dishes?

I do have a dishwasher, AND actual dishes.
But that equals more clean up which I just don't have time and/or desire for.

Gonna have to try that! Always looking for new dinners for my family...especially my 1 1/2 yr old! Question...have you done a post on music on your running playlist?? I've recently gone from running virtually not at all, and worked my way up to 3 miles all in 2 months and I credit a lot of that to the music I listen to. Just curious if you have some songs that are you "go to songs". Was going to write up a post on my blog and would love to have someone elses taste in music too!!

You just made my mother very happy. She's tried to get me into the kitchen for 20 years and only until I moved into an apartment this summer did I REALLY regret not learning from her (pasta every night gets real old real fast). So, that said, I somehow managed to successfully make this (and even vegetarian-ify it)! The only issue I have is that my roommate expects me to cook every night now...

I made this for dinner tonight...AMAZING!!!!! I used ground beef instead of chicken and whole wheat tortilla instead of corn tortillas. I also added a little taco seasoning to the ground beef. Absolutely a repeater meal!!!

I made this for dinner tonight and it was amazing! My husband ate 3 pieces. He doesn't have to worry about his weight like I do. Even my 7 year old loved it! Thank you Mama Laughlin I will most definitely be making this again!!
